Mmmmm Pie

Despite all those apples we picked I still buy at least a half peck at the monthly winter Farmer's Market. This month I made the Apple Custard Pie with Oat Crust from last month's Vegetarian Times.

Now being a custard pie it called for two eggs. Not wanting to use eggs I used a banana whipped up really well in the food processor. It worked Great! Just the tinniest hint of banana not at all overpowering and rather complimenting. Creamy and tasty and totally veganised.
