In this heat it's nice to have more than one reason to turn on the oven. And if that doesn't give you a reason to make cookies than you are a stronger person than I.
On the left are Ricotta-Basil Stuffed Tomatoes from the July/Aug. issue of Vegetarian Times. This recipe was written to either be eaten right away or to be frozen for later enjoyment. Love that. These will be frozen and greatly enjoyed in the winter. Also, just remembering that there will someday be a winter is a nice thought. On the right are double Chocolate-Oatmeal-Cranberry Cookies from Vegan Cookies Take Over Your Cookie Jar. These will be enjoyed immediately and with great joy.
